The company OLYMPIA OLIVE OIL PRODUCTION LTD was founded in 2016 and is located in Pyrgos, Ilia. Our goal is to present one of the greatest Greek agricultural products, the olive oil. The company's sole activity is the production and bottling of high quality pure virgin olive oil of Koroneiki variety, produced in our own olive groves, cultivated by specialized agronomists in olive trees, abiding by all the proper scientific agricultural practices.
Harvesting has evolved with combs, which pulsing motion and elasticity of the rods do not injure the branches and the fruits of the olive tree, resulting in the excellent quality of harvested olives. The olives are placed in sacks from natural threads to facilitate ventilation. To avoid adverse effects, the olives collected are directly led to the mill to extract the oil.
The first step at the olive mill is placement of the olives to the feed trough and from there and the support into the washing machine and the machine that will separate the olives from the leaves. There the leaves are removed using air blowers and the olives are washed to remove any foreign contaminants such as dust or dirt.
After washing the olives are driven to the grinder where rotating discs grind the olives and produce olive paste that contains in emulsion form the first drops of olive oil.
The olive paste is then driven to mixers for malaxing which aims at uniting the olive oil drops. Critical factors in the breakdown of the emulsion is the temperature, speed and duration of malaxing. After about one hour of malaxing the olive oil is extracted.
Separation is made by a two-phase separator. In one phase the solid components (pomace) are extracted and in the other olive oil. This machine uses no water for separation, but uses cold extraction, and so there are no liquid wastes harmful to the environment.
The olive oil produced is primarily filtered to remove any residues and stored in stainless steel tanks away from conditions that would affect its structure and flavor. During bottling, a precision filling machine is used and the stopper and cap are placed to seal the olive oil airtightly.
